Tender lamb is the star if this healthy, hearty salad.
The ingredient of Lamb Fattoush Salad
- 1 5kg coles lamb leg roast half
- 1 garlic clove thinly sliced
- 3 slices lebanese bread
- 1 baby cos lettuce torn
- 2 x 250g punnets cherry tomatoes halved
- 3 lebanese cucumbers coarsely chopped
- 3 radish thinly sliced
- 1 3 cup torn fresh continental parsley
- 1 3 cup torn fresh mint leaves
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon sumac plus extra to sprinkle
The Instruction of lamb fattoush salad
- preheat oven to 180c make 2cm deep incisions at regular intervals over the top of the lamb insert a slice of garlic into each incision place in a large baking dish roast for 1 1 2 hours for medium or until cooked to your liking set aside loosely covered with foil for 10 minutes to rest before carving into thin slices
- meanwhile place the lebanese bread on a large baking tray and bake in the oven with the lamb in batches depending on oven and tray size for 10 minutes or until crisp and light golden set aside to cool break into coarse 4 5cm pieces
- place the bread lettuce tomato cucumber radish parsley and mint in a large bowl combine the oil juice and sumac in a small bowl add to the salad season with salt and pepper toss gently to combine
- divide three quarters of the salad among serving plates or on a serving platter top with the lamb followed by the remaining salad sprinkle with the extra sumac
